Spinach and Feta Rolls

I love sausage rolls, particularly if they are warm and the pastry is buttery and flaky. They are a year-round treat: ideal for a winter lunch or even a summer picnic. These spinach and feta rolls are even better – the saltiness of the feta and the heartiness of the spinach combine to create a satisfying bite.

They are perfect for a snack or lunch, by themselves or with a chutney, or you can serve them at a party. We are still months away from Christmas, but these are definitely going on the menu at our Christmas party – assuming COVID-19 restrictions are over by then!

This recipe is pretty flexible, both in terms of filling and in preparation. You could add pine nuts or spring onions to the mixture, and you can add all manner of toppings instead of sesame seeds. Or you could shape them into parcels or pasties rather than rolls if you wanted a hefty lunch! The recipe below is my preferred combination.

Spinach and Feta Rolls

These tangy, flaky spinach and feta rolls are a satisfying alternative to sausage rolls. Serve as a snack, lunch or a party dish.

Ingredients
  

  • 375 g Puff Pastry ready rolled sheet
  • 500 g Spinach frozen
  • 300 g Feta
  • 3 Eggs
  • 1 tbsp Olive Oil
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 Lemon zested
  • 2 tbsp Sesame Seeds

Instructions
 

  • Preheat the oven to 200°C/390°F. Defrost the frozen spinach and squeeze as much liquid out of it as possible. The easiest way to do this is to place the spinach into a clean tea towel or dishcloth, wrap it up and squeeze.
  • In a large bowl, mix spinach with crumbed feta, 2 eggs, olive oil, lemon zest, garlic powder and onion powder, and season lightly with salt and pepper.

  • Roll out the puff pastry sheet. It should be around 32x25cm, but exact dimensions do not matter too much. Cut the sheet into two, halfway down the long edge, leaving two pieces around 16x25cm each.
  • Separate the spinach mixture into two even portions and, using your hands, shape it into a firm cylinder (or sausage shape) along the central 5cm of each piece of pastry (long ways).

  • Whisk the remaining egg. Fold one side of the pastry over the filling, and brush the top with egg. Fold over the other side to create a sealed roll. Turn each roll over and cut into 4 equal portions.

  • Place the rolls onto a baking sheet and brush with egg, then sprinkle with sesame seeds.

  • Bake for 20-25 minutes or until golden brown. Serve hot or cold.

Notes

You could use all manner or seeds or spices instead of sesame seeds. This would work well with fennel or cumin seeds, or simply with flaky salt and freshly cracked black pepper.
The filling is easily adaptable, and would work well with the addition of pine nuts and spring onions. However, you should keep the filling as free of moisture as possible.
