Huevos Rancheros is perfect for any meal, but makes for a particularly amazing brunch or a quick and tasty dinner. Start by preparing a batch of our Best Black Bean Chilli, as you’ll need the leftovers (if there are any!) for this. The black bean chilli freezes pretty well, so you could always make a big pot and portion it up for later use.
Huevos Rancheros is a traditional Mexican dish, usually a corn or flour tortilla topped with salsa and fried eggs, and with various accompaniments. Here, we use black bean chilli as a base for a fried eggs, and serve it with coriander and avocado. It would go really well with a freshly prepared salsa (of tomatoes, onion, and some fresh chilli peppers), various hot sauces, or bulk it out with leftover rice or meat.

Huevos Rancheros
Ingredients
- 2 Tortillas flour or corn
- 2 scoops Black Bean Chilli
- 2 Eggs
- 1 Avocado sliced
- 1 handful Coriander chopped
Instructions
- Start by reheating your black bean chilli in a small pan or in the microwave. Add a couple of tablespoons of water to loosen the mixture up a bit.
- Fry two eggs in your preferred way. Meanwhile slice an avocado and chop a small handful of coriander.
- Heat up two tortillas. You can do this using a naked flame if you have a gas burner – a few seconds on each side – or under a grill/broiler.
- Assemble your huevos rancheros. Place the tortilla on a plate, top with a scoop of chilli, the fried egg, and then the coriander. Serve the avocado on the side. Top with any salsa or sauces of your choice.
